Here are a few things someone might be able to help me with:

1. Some friends are leaving after visiting us for a celebration of some kind. I want to say 'Thanks for coming'.

2. We are leaving a friend's house after dinner or a party. I want to say 'Thanks for having us.'

3. We are saying goodbye to someone we met that night for the first time. I want to say 'It was really nice meeting you'. (Piacere seems inadequate).

4. We are saying goodbye to someone we have met for the second time. I want to say 'It was nice seeing you again'.

Thanks

Grazie per/di essere venuti. (plur.)
Grazie per/di essere venuto. (sing. masch.)
Grazie per/di essere venuta. (sing. femm.)

Grazie per la cena.
or
Grazie dell'invito.

Piacere di averti conosciuto. (sing.)
Piacere di avervi conosciuto. (plur.)

I used the "TU", but on the occourrence you can use the "LEI". For example if are colleagues of your partner I would use the "LEI", but are friends of a friends I would use simply the "TU"

So...
Piacere di averLa conosciuta. (sing.)
Piacere di avervi conosciuto. (plur.)

4. We are saying goodbye to someone we have met for the second time. I want to say 'It was nice seeing you again'.

Mi ha fatto piacere rivederti. (sing. informale)
Mi ha fatto piacere rivederLa. (sing. formale)
Mi ha fatto piacere rivedervi. (plur.)

or also

Mi ha fatto piacere reincontrarti. (sing. informale)
Mi ha fatto piacere reincontrarLa (sing. formale)
Mi ha fatto piacere reincontrarvi (plur.)
