here's a email reply i got from them in May. It might have changed since, i don't know. If in doubt, email or call them, details below. Best of luck.
-------------------------------------------- You can register by sending the application form to the Secretariat of Italian Language Courses (by mail, fax or e-mail), and by paying the enrolment fee at the same time (750 euros for a three-month course, 520 euros for a two-month course, 300 euros for a one-month course).
The address to which documentation (application form and proof of payment) should be sent is:

Once payment of the fees has been verified the Student Secretariat will send you a certificate confirming your enrolment, useful to get the visa at the Italian Embassy in your country if you need it.
When you arrive at the University you will have to take the entrance exam to establish your level and go to the Secretariat of Italian language Courses with your exam result to complete the registration procedure. --------------------------------------------

When I enrolled at Uni x Stranieri di Perugia, all I had to do was send enough money for one month of classes, sort of like a deposit, because you can pay for classes in monthly installments. I still marked on the application how long I was going (very important to do that!), and the enrollment letter they sent me showed the correct time period. I paid the rest when I got to Perugia. Either way you'll want to wire your money to them first and then when you apply (I did it by fax), include the bank's wire receipt with the application as proof of payment.

Hi Kaybe - ask as many questions as you want  On the application form in the section that says "periodo di frequenza" (period of attendance) which is how long you wish to be there, put the starting date and the end date. (it's after the part about highest level of education, which is right after your stats like name, e-mail, address, name & such). Also, you see the part with all the course dates, and check marks next to them? Just check boxes for all of the periods you will be there.  Application form is here.
