I love sagre and in our area there are usually one or two every weekend in the summer. In this part of southern Marche and northern Abruzzo some of the common foods we find at the sagre are of course olive all'ascolana, arrosticini, pasta all'amatriciana and patatine fritte. Wines will be falerio and rosso piceno and always beer on tap.
Of course with a sagra for a specific food or beverage specialty this will vary but these seem to the most common denominator. What are the most common in your area of Italy?

A sagra is often dedicated to some specific local food, and the name of the sagra includes that food and there are those celebrating olive oil, wine, pasta and pastry of various kinds, chestnuts, and cheese.
In small town near us, Madonna del piano, it's the sagra di Tequila! NO, we havn't figured it out either! They actually DO have tequila and make margheritas!!!
Most sagre will have a variety of food, even if they'er 'celebrating' one food in particular. Around here we have lots of torta al testo, grilled sausages and umbricelli.
Our week long festa starts tonight in San Venanzo, and my mouth is already watering! Just the smell of the sausages on the grill will be heavenly!
