Does anyone know if this is eaten in Italy?

Where should I look to buy fresh calf or pork brains?

quote:

Ingredients:

2-1/2 Tablespoons bacon grease
4 eggs
1/3 cup whole milk
1/4 teaspoon freshly ground black pepper
1/4 teaspoon salt
1 can (5 ounce) pork brains in gravy (Rose Brand preferred)

Melt bacon grease in an iron skillet on low heat. Add brains to heated grease. Stir with a fork. Add salt and pepper and stir. Whisk eggs and milk together. Increase heat and add egg mixture to brains. Scramble to desired consistency. Serve immediately over toast.

Serves: 2

never heard of it myself but i would avoid all supermarkets and local shops. Go and find an old fashioned kind of butcher's where they probably chop up the animals themselves in a back room. Your request might be met with a puzzled frown as they would probably consider this waste but i'm sure that if they have it, they'd gladly sell it rather than just throw it out with other waste.
